Oh, hello there! Today, I want to share with you one of my all-time favorite salads, crispy chicken & noodle salad. This dish is a perfect blend of flavors and textures, and it’s super easy to make. Let’s dive right in!
Ingredients:
- 300g / 10.5oz chicken breast
- 150g / 5.3oz dried thin egg noodles
- 4 cups mixed salad leaves
- 1/4 cup coriander leaves (cilantro)
- 1/4 cup mint leaves
- 1/4 cup Thai basil
- 1/2 carrot, finely sliced
- 1/2 red onion, sliced
- 1/4 cup crispy fried shallots (optional)
- vegetable oil for frying chicken
Instructions:
- Heat oil in a frying pan over medium-high heat. Add chicken and cook for 5-6 mins on each side or until cooked through. Remove from pan and set aside to cool.
- Cook noodles according to packet instructions. Drain and set aside to cool.
- In a large bowl, combine mixed salad leaves, coriander leaves, mint leaves, Thai basil, carrot, and red onion.
- Once the chicken has cooled, slice it into thin strips and add it to the bowl.
- Add the cooled noodles to the bowl and toss everything together.
- Serve on a plate or in a bowl, sprinkle crispy fried shallots on top (if using).

This salad is perfect for a quick and easy lunch or dinner, and it’s also great for entertaining. You can make the chicken and noodles ahead of time and store them in the fridge until ready to use.
