- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 can (14-1/2 ounces) beef broth
- 1 cup water
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 4 medium carrots, cut into 1-inch pieces
- 3 medium potatoes, peeled and cut into 1-inch pieces
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Instructions:
- Toss beef with flour, salt and pepper. In a large skillet, heat 2 tablespoons oil over medium-high heat. Brown beef in batches, adding more oil as needed. Remove with a slotted spoon and keep warm.
- Add onion to the same skillet; cook and stir over medium heat until tender. Add garlic; cook 1 minute longer. Stir in broth, water, tomato paste and thyme. Bring to a boil, stirring to loosen browned bits from pan. Add beef and carrots; reduce heat to low. Simmer, covered, until beef is tender, 1-1/2 to 2 hours.

- 3 celery ribs, sliced
- 1 cup frozen peas

- In a large bowl, toss beef with flour, salt and pepper. In a large skillet, heat oil over medium-high heat. Brown beef in batches. Remove beef with a slotted spoon and keep warm.

- 2 lbs beef stew meat, cubed
- 1 Tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 2 cans (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) chickpeas, drained and rinsed
- 3 large carrots, sliced
- 1 1/2 cups beef broth
- 1 Tbsp tomato paste
Instructions:
- In a large bowl, combine beef, olive oil, onion, garlic, salt, black pepper, cumin, paprika and cayenne. Mix until beef is well coated.
- For Instant Pot: Select “saute” mode, then add beef mixture to the pot. Cook until beef is browned on all sides. Add diced tomatoes with juice, chickpeas, carrots, beef broth and tomato paste. Stir well. Cover pot and lock lid into place. Set for 35 minutes on high pressure. Quick release when done.
- For Slow Cooker: Add beef mixture to slow cooker. Add diced tomatoes with juice, chickpeas, carrots, beef broth and tomato paste. Stir well. Cover slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
